Located on a beautiful and secluded inland plot of land just outside of San Diego, the Rancho Bernardo Inn offers rustic sophistication, a championship 18-hole golf course, extensive spa and numerous dining options. The staff here is friendly and extremely accommodating. Beautiful grounds overflow with succulent plants and the smell of rosemary and lavender tickle the senses as you wander down paths lined with olive trees and lush flora.

If looking for inspiration on how to decorate a small gingerbread house, the Rancho Bernardo Inn has a life-size version that might spark some sweet ideas.

The 9-foot high, 12-foot wide house can be viewed for free in the RB Inn’s lobby, 17550 Bernardo Oaks Drive. It will remain on display through the New Year.

Pastry Chef Margaret Carvallo has led the four-member team for the past four of the five years the inn has had the house as part of its annual holiday decorations. When she joined its staff, Carvallo said the house was one of the first things she was told about.

“I had never made a life-size gingerbread house before,” Carvallo said of her 12 years in the baking industry. The lifelong county resident graduated from the California Culinary Academy.

“I really like that it brings the team together,” she said. “It really does feel like Christmas.”

The Winter Made Fresh Daily Cranberry Almond Escape ($175, 80 minutes) relies on local seasonal ingredients, as well as an organic massage oil from Kerstin Florian. The treatment includes a blood orange and bay leaf sugar scrub, a cranberry essential oil wrap, and an almond-oil scalp treatment. “These treatments are made from products you can find in your own home, says spa director Cindy Boody. “We want the spa experience to translate into a spa lifestyle.”

The Spa at Rancho Bernardo Inn, San Diego normally uses seasonal ingredients and this winter is no exception. From December through January you can indulge in the Chocolate Candied Orange Treatment, and indulge you will! This treatment starts with a hazelnut and orange scrub; then comes a chocolate comfrey wrap and cinnamon scalp treatment; an Acai butter massage follows, as does a mulled cider drink. The spa then sends you on your way with a take home recipe for hazelnut and sea salt shortbread cookies. The cost for this extravagance is $175.
