After three years of recession-related slow sales, the local restaurant industry is roaring back to life again with new openings and new chefs galore.

Perhaps the newest is Scott Thomas Dolbee, who started his new job as executive chef at L’Auberge Del Mar resort’s Kitchen 1540 just this week. Dolbee grew up in Encinitas and said he’s excited to return to his hometown after spending the past six years cooking at the Four Seasons resort in Whistler, British Colombia. And Amanda Baumgarten, a season 7 finalist on Bravo’s “Top Chef,” has been working at Brian Malarkey’s Burlap in Solana Beach the past two months warming up for the April opening of Malarkey’s Herringbone.
